Bread Ahead - Fruit & Nut Soda Bread
Put down the box of crackers, save that crispbread for another day Bread Ahead have got the perfect companion for your Christmas cheese board... their fruit and nut soda bread.
This bread is ideal for using up the last of the nut selection box or those few prunes left over from Christmas lunch. Grab all and any dried fruits and nuts, toast them, chop them and turn your Christmas dregs into baking gold.

Ingredients
• 250g coarse wholemeal flour
• 250g self-raising flour
• 80g coarse oatmeal, extra for dusting
• 6g bicarbonate of soda
• 12g fine sea salt
• 25g black treacle
• 250g buttermilk
• 200g water
• 100g mixed nuts/dried fruits of choice
• 1 teaspoon olive oil
Method
1. Preheat your oven to 200℃/fan 180℃/ gas 6
2. Line a baking tray with baking paper
3. In a large bowl mix all the dry ingredients together
4. Pour in the black treacle, buttermilk and water, then mix together until a wet sticky dough is
formed
5. Add in the chopped nuts and fruits and fold them into the dough
6. Turn your dough out onto a floured surface
7. Dust your hands with some flour then bring the dough together to form a ball
8. Place on the prepared baking tray, rub the oil all over the top of the dough
9. Sprinkle heavily with coarse oatmeal
10. Cut a cross through the dough about a quarter of the way through, using a serrated knife
11. Leave to rest for 8 minutes
12. Then bake in the preheated oven for 40 minutes, until golden brown
