Ingredients

Red snapper (or any whole fish)
1 large thumb ginger
1 bundle spring onion
4 garlic cloves
2tbs soy sauce

1tbsp hot water
1-2 tsp sugar
3 tbsp rapeseed oil (any high-heat neutral oil)
Serve with rice
Method
Steam the fish until tender, this one took about 12 minutes. Cover with the sauce, garlic, ginger, and green onion. Heat the oil until it starts to shimmer, then pour it over the top making sure to get it all over aromatics. Serve with rice and enjoy.
