GNOCCHI WITH LEMON & SAGE SAUCE
Think homemade gnocchi is best left to the chefs? Think again – with our easy recipe, wondering how to make gnocchi can be a thing of the past. Our simple lemon and sage sauce is also the perfect accompaniment to this classic Italian dish.

For the gnocchi:
· 500g potatoes
· 160g flour
· 1 egg yolk
· 1½ tsp salt
· 1 pinch grated nutmeg
· Cornflour
For the sauce:
· ½ bunch sage
· 1 lemon
· 80g onion, finely chopped
· 40g butter
· Salt and pepper
· 50ml white wine
· 250ml cream
Method
Preparation time: 20mins
Cooking time: 45 mins
Serves 2 -4
1. Clean and peel the potatoes and bring to the boil. Let them cool completely, then mash
2. Form a dough with potatoes, flour, egg yolk, salt, pepper and nutmeg. Divide into five and roll each piece into thumb-thick ‘ropes’, lightly sprinkling the surface with flour so that the dough does not stick
3. Cut ropes into 2cm pieces and place on perforated steamer tray. Steam the gnocchi on shelf level 2 on Full Steam at 95°C for 30 minutes
4. To prepare the sauce, snip sage leaves from the stems and set aside 8 leaves for garnish, finely chopping the rest. Zest and juice the lemon
5. Sauté chopped onion in the butter and season to taste with salt and pepper. Add white wine and let it bubble for 2 minutes, add cream and reduce to two-thirds. Add the chopped sage leaves, lemon zest and lemon juice
6. To serve, toss the steamed gnocchi in the sauce, then serve on preheated plates and garnish with sage leaves, a little grated Parmesan to taste, plus salt and pepper
Chef Tip: Sprinkle with crispy bacon if you want to add salty flavour notes and more texture
