Crispy Roast Pork Belly with Crunchy Slaw
CRISPY ROAST PORK BELLY WITH CRUNCHY SLAW
Who can resist crispy pork crackling? Pair it with crunchy salad for a delightful family feast.
Ingredients
- 5-2kg Belly pork
- 2 tbsp olive oil
- 2 tbsp fennel seeds
- 1 tbsp Salt flakes
- 2 green apples, cored and sliced into match sticks
- Juice of half a lemon
- 5 tbsp Light Mayonnaise
- 5 tbsp Asda Greek 5 Yogurt
- 1 tsp English mustard
- 1 tsp runny honey
- 200g white cabbage, shredded
- 1 fennel bulb thinly sliced
- 100g carrots, coarsely grated
- 1red onion, thinly sliced
- 2 tables spoons chopped flat leaf parsley
Chef tip – why not add some strong grated cheddar for some extra flavour
Method
Roast Belly Pork Recipe:
1. Score the skin and rub in salt and fennel seeds
2. Slice the onions and place pork on top in a roasting tray
3. Set you oven on Low Humidity Pro – 200oC for 3 hours until the crackling is perfectly crispy
Slaw Recipe:
1. Mix the mayonnaise with the Greek yogurt, mustard and honey. Season to taste.
2. Toss the apples in the lemon juice then add it all to the mix
3. Fold in all the other ingredients into the dressing
4. Season to taste
