Prawn Thai Curry

A super easy homemade Thai Prawn Curry that is packed full of flavour. Simply follow the recipe below.

Ingredients

  • Fresh Curry Paste

    ·        6 medium green chillies, de-seeded

    ·        2 shallots

    ·        6cm piece of fresh ginger, peeled

    ·        6 garlic cloves peeled

    ·        2 tsp Thai fish sauce or light soy sauce

    ·        1 lime, grated zest and juiced

    ·        Small bunch of fresh coriander, stalks and roots attached if possible

  • Curry

    ·        2 sticks of lemongrass

    ·        Sesame oil

    ·        2 Thai Chilli Peppers

    ·        100g Fresh Ginger Diced

    ·        400ml Coconut Milk

    ·        175g Baby sweet corn

    ·        150g Mange Tout

    ·        400g Prawns

Method

1.      Put all the ingredients for the paste into a blender and blitz

2.      Beat the lemongrass flat with the base of a saucepan or flat side of a knife.

3.      Heat the sesame oil in a wok and add your curry paste, cook out, add the chilli, ginger, coconut milk.

4.      Add the lemon grass, baby sweet corn, mangetout, prawns and cook until the prawns are pink.
