Sausage Salad with Sweet Potato and Walnuts

Salads are boring? Definitely not! This sausage salad proves otherwise. The combination of savoury sausage, sweet potato, and caramelised onion creates the perfect balance between hearty and soft, while the salad mix and walnuts add a fresh crunch. The best part? Ingredients (for 2 people):
- 2 beef sausages (or your favourite veggie variant)
- 200 g sweet potato
- 75 g salad mix
- 1 onion
- 1 handful of walnuts
- 2 tbsp Dijon mayonnaise (or 1 tbsp mayonnaise mixed with 1 tbsp mustard)
Method:
- Wash the sweet potato and cut it into small cubes. Peeling is optional! Slice the onion into thin rings.
- Place the sweet potato cubes on a baking tray lined with parchment paper, drizzle with a little olive oil, and season with salt and pepper. Roast the sweet potatoes in the steam oven for 20-25 minutes at 180°C low steam.
- While the sweet potatoes are roasting, heat a little oil in a frying pan over medium heat. Cook the sausages for 10-12 minutes until golden brown. You can also fry the onion rings until soft and caramelised.
- Roughly chop the walnuts and toast them in a dry pan until lightly coloured and crispy.
- Assemble the salad by placing the salad mix on two plates. Top with the roasted sweet potatoes and caramelised onion rings. Slice the sausages and place them on the salad.
- Mix the Dijon mayonnaise with a splash of extra virgin olive oil and drizzle it over the salad. Finish with the roasted walnuts and an extra pinch of salt and pepper.
