Ingredients: for 4 people
EGGS BENEDICT
- 8 eggs
- Vinegar
- Basil
- Hollandaise sauce
250 g good butter (in fine cubes)
2 egg yolks
2 tablespoons of water
2 tablespoons of white wine vinegar
- Mushrooms
400 g mushroom mix
4 tablespoons of soy sauce
3 sprigs of sage
2 tablespoons peanut oil
1 shallot
1 bell pepper
PANCAKES
- 3 eggs
- 350 ml whole milk
- 100 ml cream
- 300 g pastry flour
- 2 tablespoons of sugar
- 1 teaspoon of baking powder
- 0.5 teaspoon of baking soda
- 1 teaspoon of salt
- 75 g butter
GARNISH
-Berry mix
-Icing sugar
-Maple syrup
PREPARATIONS
EGGS BENEDICT
Mushrooms:
- Stew the finely chopped shallot, bell pepper and sage in the pan and add the mushrooms they are nicely coloured
- Deglaze with soy sauce
Hollandaise sauce:
- Beat the egg yolks, water and vinegar in a cooking pot
- Place the cooking pot on the lowest heat setting
Pay attention! Keep knocking
- Add the lumps of butter while beating
Keep stirring until you get a thick, smooth texture
Pay attention! The sauce should not boil
- Turn off the heat and let the sauce rest under the lid
Eggs:
- Set up a pot of water to poach the eggs
- Add a dash of vinegar to the boiling water
- Stir the water in circles and break the egg in the centre of the bowl
Keep stirring for 2 to 3 minutes
- Remove the poached egg from the water and carefully place on top of the mushrooms
- Then do this with the rest of the eggs
PANCAKES
- Beat the eggs in a large mixing bowl
- Add the cream and the whole milk
- Sift the flour into another bowl
- Add the sugar, baking powder, baking soda and salt here
- Gradually mix the batter of the eggs underneath until it is nice and smooth
Pay attention! No lumps should remain in the mixture
- Melt the butter in a frying pan and make small pancakes about 10 cm in diameter over a medium high heat
- Turn the pancake when the dough is no longer liquid
GARNISH
EGGS BENEDICT
- Place the mushrooms at the bottom with the poached eggs on top and spoon Hollandaise sauce over it
- Finish with the finely chopped basil
PANCAKES
- Put these in a pile
- Add the maple syrup and icing sugar
- Finish with the berries
