Ingredients: For 4 people
- 4 tablespoons peanut oil
- 220 g tofu (cubed)
- 4 pieces of bok choy
- 2 eggs
- 500 g egg noodles
- 1 ½ teaspoons ground coriander seeds
- 4 teaspoons of dark soy sauce
- 4 teaspoons of light soy sauce
- 2 tablespoons of water
- 2 shallots
- 2 tablespoons of sesame seeds
- 100 g sugar snaps
GARNISH
- 1 lime (cut into a few pieces)
- 1 spring onion
- 1 chili pepper
- 4 teaspoons of sambal oelek
PREPARATIONS
- Stew the finely chopped onion and shallots in the peanut oil and add the cubes of tofu for 2 to 3 minutes
- Put the pak choi cut in length in the pan together with the sugar snaps
- Add the eggs, sesame seeds and coriander seeds and stir until cooked
- Deglaze with the white and dark soy sauce and add the fresh noodles
- Add some more water if necessary
GARNISH
- Finish with the lime, spring onion and chili pepper
- You can offer the sambal next to the dish
